Coffin Baked Avocado

Ingredients

  • 1 avocado
  • 1/4 cup pepper jack or cotija cheese, shredded or crumbled
  • 2 eggs or egg whites
  • 1 jalapeno, finely sliced
  • 1 teaspoon chopped cilantro
  • 1 tablespoon fresh salsa
  • 1 tablespoon cooked bacon
  • Salt and pepper
  • Coffin hot sauce

Instructions

Step 1

Preheat the Oven: Turn oven to 350 degrees.

Step 2

Prepare: Remove the pit and scoop out some of the avocado flesh (enough to place an egg). 

Step 3

Stuff: Take 1 ⁄ 2 tablespoon of fresh salsa and place in the bottom of each avocado. Drizzle Coffin hot sauce on top of salsa. Next crack an egg and sift the majority of the egg white out so you neatly place it in the hole of the carved avocado. Top with cheese, cooked bacon bits, sliced jalapeno and drizzle more Coffin hot sauce.

Step 4

Cook: Bake for approximately 10 minutes, you can alter the cooking time depending on how you want your egg cooked.

Step 5

Serve: Top with cilantro, salt & pepper and serve Immediately
